The Roasting Process, Why It Matters
Every great flavour has a method behind it. Ours is patience.
Most commercially roasted cashews are peeled first, then roasted quickly at high heat. It's efficient. It's fast. And it produces a cashew that tastes fine, predictable, uniform, and forgettable.
We do the opposite. We roast our cashews whole, skin still on, at a lower temperature, over a longer time. This slow process does something remarkable to the nut. The natural skin acts as a seal, trapping moisture and the nut's own aromatic compounds inside during the roast. The result is a cashew that steams and deepens from within, developing a smoky complexity, a richer sweetness, and a texture that a fast-roasted, pre-peeled cashew simply cannot achieve.
